In Live mode the master dimmer works well with all my fixtures. How can I use the master dimmer only for some fixtures and not for all?

No, that's why it is called the master dimmer, it's job is to control all fixtures dimmer channels. If you want to dim specific fixture groups you can either assign a midi fader to the dimmer channel for the fixture group, or create a scene with just the dimmer channel and add a dimmer fader to that scene.

I am currently having an issue with midi feedback on fixtures which I have assigned a dimmer scene to, but this may not be an issue for your application.
