How would you achieve sub-masters in DL4?
I couldn't find this functionality but since it is such a common functionality I think I'm overlooking something.
I create my scenes with all dimmers on 100%. When doing a show I want to change the dimmer of each fixture family on the spot. The time, ambience, colour combination and fixture combination affect the desired dimmer position for that moment.
Switching a scene should not affect the dimmer output.

Hello,
You might want to remove the dimmer channel from your scene's affected channels, then.
In order to achieve this, click on the "ON" button under your DIMMER channel fader. The channel will be switched to "OFF", and your scene will stop affecting it.

I have multiple scenes for different fixtures. Moving heads have a couple of dimmer effect scenes, parr fixtures have a different couple of dimmer effects scenes, etc.
I would like to have a couple of dimmer sliders controlling the max dimmer of a group of fixtures (so e.g. all the moving heads have a master dimmer, all pars have a master dimmer, etc)
It seems like a basic feature, so I hope this could be done in Dashlight 4.

Sadly I'm afraid this feature is not available in D4. But D5 has precisely what you need, in the shape of a "mixer" panel.
