This effect always needs at least two colors. That is why you cannot delete the last two.
You can either edit the red and orange to fit your needs, or add more colors and THEN delete the red and orange.

As far as I've tried, "Delete" doesn't always seem to work for the two leftmost colors.
This behavior seems to be the same when there are only two colors and when there are three or more colors in the color list.
